  1. But carbs ARE essential- we can’t live without them. This is why our bodies have a back up mechanism for making glucose, gluconeogenesis.

    I’ve learned the process of gluconeogenesis is a stress on our bodies (involving stress hormones for the process).

    We have this back up ability to create glucose when we are not taking in the carbs our bodies need. I’m thinking we ought to then not restrict carbs, but eat them according to our individual needs.
